Our nation is experiencing a national epidemic of lifestyle disease.  24 million Americans have diabetes, another 57 million have “pre-diabetes”, and “adult onset” diabetes has made a surprise appearance in children.  Seventy million Americans suffer from cardiovascular disease.                 2/3 of Americans are overweight or obese.  We are clearly in trouble.


All the evidence points to the same thing--an optimal diet is based on more plant and less animal--       difficult concept to convince most Americans to embrace while in a love affair with animal food.  An abundance of research over the last 50 years shows that what has always been an optimal diet still is an optimal diet.  The American dietary recommendations are looking more like the "Mediterrranean" diet each year with its emphasis on vegetables, legumes, nuts, fruit, whole grains, fish and olive oil. 


And lest you are tempted to believe in the next new scientific breakthrough which precipitates another new diet, recall what the writer of Ecclesiastes wrote:


                           “There is nothing new under the sun.” Ecclesiastes 1:9


You can be sure of one thing--an optimal diet is NOT going to change.  It is we who must do the changing.
